Happy New Year to all our customers and what exciting times we have ahead of us!
We have been closed over the last two weeks, creating and tasting new dishes for our Brasserie menu, redesigning our Restaurant in preparation for an amazing fine dining menu which will be available four nights of the week. The menu has been created by our new Head Chef Sebastian Smith. Seb, as we call him, studied physics at Exeter University and then realized his passion was food and started his culinary journey working at the RAC Club in London, from there he moved to Stoke Park, a 5 red star Hotel, 3 Rosette Restaurant working with Head Chef Alex Edwards and pastry Chef Adama Diaw. From there he moved with Alex and Adama to work in Gt Fosters a 4 Red star Hotel, 3 Rosette and 1 Michelin star and finally both he, as Head Chef, and Adama moved to Oakley Hall for three years. Adama before he met Seb had worked in a bakery – La Gelette in Dakar, Senegal where he originated from and then in the fine dining gastronomic restaurant of the Terron Bi Hotel. He came to Britain some 11 Years ago and worked in St James Court Hotel as head Pastry Chef before moving to join his now very good friend Seb at Stoke Park. Both are passionate about food and we, at Wolfscastle, feel proud to have them on board to raise our standards even higher. With Mark McRobert our Sous Chef and Mike Ion our pastry guru for the last 13 Years and the Kitchen brigade we have created exciting dishes for out Brasserie menu as well as the fine dining 6
Pembrokeshire which the perfect place to unwind with its sweeping beaches, stunning cliff walks, small harbours and rolling landscape makes an ideal location to take a break, imagine a day discovering the beaches of Pembrokeshire and then relaxing in our Allt Yr Afon Restaurant – the original name of the Hotel – Which means “wood by the river” or the Stirling Brasserie, both where Seb and his team will titivate your taste buds with culinary delights.
Very soon it will be February when we will be holding a Michael Bublé evening on Saturday 12th and our 5 course Valentines dinner on Monday 14th .
