As spring creeps into summer, Pembrokeshire is beginning to look its very best. Trees are taking on their summer mantle of luscious green, and colour is appearing everywhere across the landscape.
People are venturing into the sea, Freddie, our cocker spaniel, and I are walking along the beautiful Pembrokeshire Coastline, exploring the coves and inlets that abound. I am an avid watcher of Springwatch, Pembrokeshire often features – showing pictures of puffins, guillemots, razorbills and many other varieties of wildlife that live around the Pembrokeshire coastline. Every year my family make the trip from St Justinian around Ramsey Island to watch the birds, the seals and very often dolphins. Last year, we tried mackerel fishing with a lot of success.
Thanks to Donald Trump, Putin and others, we have had a quiet year so far – all the better for the visitors who have travelled to our haven of beauty. We have been offering good discounts to keep the flow of traffic through our front door, so keep an eye on our website, don’t miss out!
We are excited that our head pastry chef, Youssoupha Dias, who came to us from Stoke Park, a Michelin-starred establishment near London. He was recently asked to cater for the President of the Congo in Africa. He has now been selected to represent Senegal, his home country, in the “Coupe du monde de Pâtisserie” being held in Rome, where pastry chefs from all over the world compete in an international competition. What an accolade for him and good luck! Come to the hotel to try his amazing desserts and petit fours, the very best being featured on our fine dining menu – a real culinary experience (which we are still only charging £75 a head for). The next big event in the hotel is our annual ladies’ day, held on Sunday, 6th July. Between 150-200 ladies arrive at 2:30 dressed in their finery to be greeted with a glass of Pimms and a full display of Youssoupha’s savoury/sweet afternoon tea. We hold a raffle with 30-plus prizes, with the money going to Paul Sartori. Music is being supplied by The Morgan & Melville Duo. Once the Pimms starts flowing, dancing is on the cards and much enjoyment can be had! Our spa therapists are on hand to give mini treatments – All this for £30 per person, a portion of the ticket value going to the charity.
Our new summer Brasserie menu is about to come on board so please all come to taste and enjoy. Support one of the privately owned businesses of its type still surviving.
Next year we celebrate my 50th Year of owning and running Wolfscastle Country Hotel, I hope to make it a big year. Thanks to all those who have supported me for all these Years.
